One Skillet Mexican Chicken and Rice

What you need

cup chicken broth

clove garlic clove

shallot

cup rice

tsp pepper
chicken breast

tsp garlic powder

oz fire roasted tomatoes

tsp ground cumin

cup cooking oil

tsp table salt

tsp chili powder

tsp paprika

tbsp tomato paste

tsp chipotle chili powder

tsp oregano
Instructions
Mix the dry seasonings and oil for the marinade. Once ready, heat an oven safe skillet and sear the chicken for 3 minutes per side. Remove add oil and cook the shallot for a few minutes. Then add the garlic, and the uncooked rice. Stir in the tomato paste. Add the tomatoes and broth. Season with S&P, stir, and bring to a simmer.
