One-Skillet Salsa Verde Enchiladas

Another flavor packed easy Monday meal for your rotation. These come together quickly (30ish minutes) and are absolutely delcious! We served with rice and some refried beans!

What you need

tsp garlic powder

pepper

shallot

clove garlic clove

tbsp butter

cup monterey jack

tbsp ground cumin
lb chicken breast
cup salsa verde

corn tortilla
Instructions
Cut the chicken breasts into strips and season well with salt, pepper, garlic. In an oven safe pan add some oil and cook the chicken fully through (breaking into smaller pieces). Remove and add the butter, shallot, and garlic. Cook for a minute then add to a mixing bowl with the cooked chicken, cumin, buterr shallot mixture, and salsa verde. Stuff and roll the tortillas. Add a layer of salsa to the pan and then the enchiladas. Top with more salsa and cheese. Bake at 375 for about 20 minutes!View original recipe
