Roasted Asparagus and Baby Red Potatoes

Honestly, this side is perfect for steak, seafood, or just eating all by itself! I’m sure most of you are spending time with family this weekend, so bring it along and let the side dish be the talk of dinner!

What you need

tsp salt

pepper

lb red potato

oz grated parmesan cheese

tsp garlic powder
tbsp vegetable oil
Instructions
Cut your baby reds into small 1” pieces and add to a bowl. Season with salt, pepper, garlic powder and half the oil. Toss and add to a baking sheet lined with parchment paper. Bake at 400 for 20 minutes. In the meantime toss the trimmed asparagus with salt, pepper and the remaining oil. After the 20 minutes add the asparagus to the sheet and bake for 10 more. Remove, sprinkle on some Parmesan and bake for 5 more minutes. Remove, and of course, add some more Parmesan (if you want 😊) Enjoy!View original recipe
