Roasted Tomato and Garlic Pasta

This pasta has been one of our favorite weeknight dishes for a long time. The steps are simple, its relatively quick, and the kids love it. We add sausage in ours, but you definitely don’t have to!

What you need

tsp salt

pt cherry tomato

clove garlic clove

tbsp cooking oil

oz parmesan cheese

lb spaghetti noodles

tsp red pepper flake

fresh basil leaves

tbsp unsalted butter
lb sausage
Instructions
In a bowl, add the cherry tomatoes (halved), 1 tablespoon oil, 2 minced garlic cloves, salt, and pepper. Add to a baking sheet and bake at 400°F (200°C) for 20 minutes. In the meantime, boil the spaghetti noodles according to package directions. If adding sausage, cook the 1/2lb spicy sausage in a separate pan until browned, then remove. Heat 2 tablespoons oil and 2 tablespoons butter in a pan. Add the red pepper flakes and the remaining 2 minced garlic cloves and cook until fragrant. Toss in the cooked noodles, roasted tomatoes, cooked sausage (if using), and chopped basil. Sprinkle on the shredded Parmesan and enjoy!View original recipe
