Salsa Chicken Skillet

Well, you all agreed that ‘Easy Meal Monday’ needs to be a thing, so here you go! First things first, if you don’t like cauliflower rice, you can absolutely substitute with cooked white rice.

What you need

tsp smoked paprika

oz cauliflower rice

scallion
oz dried chili

tbsp chili powder

cup black beans

tsp cumin powder

cup white rice

skinless boneless chicken breast

garlic
cup salsa

salt

black peppercorn
Instructions
In a dish, mix the chili powder, cumin and paprika. Season the chicken breast with S&P and 1t of the seasoning. In a pan heat the oil and chicken the chicken fully through, remove. Add more oil and the cauliflower rice (or cooked rice). Add the remaining seasoning, the garlic and green onion. Stir in the chilis, beans, and salsa. If using cauliflower, cook for 6-8 mins to soften… if using cooked rice, move to next step! Add back the chicken, sprinkle on the cheese and melt. Enjoy!!View original recipe
