Sheet Pan Chile Salmon

An easy and healthy sheet pan salmon recipe with roasted vegetables, seasoned with a flavorful chile-lime marinade. Perfect for a quick weeknight meal.

What you need

clove garlic clove

tbsp water

yellow bell pepper

tsp red pepper flake

tsp red pepper

tbsp honey

lb salmon
tbsp vegetable oil

cup lime juice

cup fresh parsley

tsp ground cumin

Instructions
1. Boil the potatoes until they are soft but not fully cooked through. 2. Chop the red pepper, yellow pepper, and onion. Slice the salmon. 3. Add the chopped vegetables and sliced salmon to a sheet pan. 4. In a bowl, mix together the lime juice, oil, water, chopped parsley, minced garlic, red pepper flakes, cumin, salt, pepper, and 1 tablespoon of honey to create the marinade. 5. Use half of the marinade to baste the ingredients on the sheet pan. 6. Broil the sheet pan for 10 minutes or more, until the salmon is cooked to your desired doneness and the vegetables are tender. 7. While the salmon is broiling, heat the remaining half of the marinade in a small saucepan, adding the additional 3 tablespoons of honey. 8. Once cooked, baste the salmon and vegetables with the heated sauce and serve immediately. Enjoy!View original recipe
