Sheet Pan Gnocchi

We cook up a super easy and definitely delicious one pan gnocchi dish. This can be vegetarian or you can spice it up like we did with some andouille sausage!

What you need
andouille sausage

pepper

cup corn

tbsp unsalted butter

oz gnocchi

shallot

tbsp olive oil

tsp dried parsley

pt cherry tomato

clove garlic clove
Instructions
Slice up the tomatoes, shallot and garlic and add to a baking sheet. Drizzle on the oil and season with salt and pepper. Bake at 425 for around 10 minutes. If adding sausage, slice and mix in with and the tomatoes and bake for 10 more. If not adding sausage, bake the veggies for about 20 minutes (being careful not to burn the garlic). Slice up your corn and mix in the corn and gnocchi to the pan. Bake for another 10 minutes. Add the butter and parsley and mix it all together! Enjoy!View original recipe
