Spicy Pesto alla Vodka Pasta

This one is a game changer, I promise. For me we always add some protein so I did sausage, but you could easily sub in chicken! It’s super easy to make and the flavors are incredible. The leftovers will give you all something to fight over!

What you need

tbsp salted butter
shallot
cup grated parmesan cheese

oz tomato paste

oz penne pasta

cup extra-virgin olive oil
cup heavy cream
oz pesto sauce

lb chicken sausage

garlic

salt

basil
Instructions
Chop the garlic and shallot. Boil the pasta til Al dente and reserve 1C pasta water. In a pan, add oil and then the garlic and shallot. Cook for a few minutes on medium low and make sure not to burn. Next add the tomato paste and red pepper flakes. Cook for 2 minutes add the vodka and cook for 2 more. Now time for the pesto, cream, salt and pepper. Stir and cook for another 3 minutes. Add the butter and cheese, then the protein and pasta. Stir, top with basil and more cheese! Enjoy!!View original recipe
