Spicy Pesto Pasta with Asparagus and Mozzarella

It’s not typical of me to make pesto pasta and not include chicken.. but this recipe from @halfbakedharvest called for prosciutto so we went with it! The only tweak I made is I swapped out the ricotta for some fresh mozzarella and it turned out delicious!

What you need

oz pesto

oz fresh mozzarella

lb long pasta

fresh lemon juice

cup water

bunch asparagus

jalapeno
Instructions
Preheat the oven to 375 degrees Fahrenheit. Layer the prosciutto on parchment paper and bake for 8-10 minutes. Boil the pasta according to package directions. When the pasta has 3 minutes left in its cooking time, add in the cut asparagus. Strain the pasta and asparagus, but save 1 cup of the pasta water for thinning out the sauce. Mix all the ingredients together with the reserved pasta water and enjoy!View original recipe
