Stuffed Poblano Peppers

What you need

oz shredded cheese

tsp black pepper

onion

tsp ground cumin

red pepper

tbsp cooking oil

tsp table salt

tsp cayenne pepper

lb ground beef

clove garlic clove

tbsp chili powder

tsp paprika

Instructions
On a baking sheet, lay down the cored and halved poblanos. Drizzle with oil, rub it in, and season with salt and pepper. Bake at 400°F (200°C) for 10 minutes. While the poblanos are baking, add oil to a pan along with the chopped red pepper and onion. Cook until soft. Then, add the ground beef. Once the beef is no longer pink, add the minced garlic, chili powder, cumin, paprika, salt, and cayenne. Mix all ingredients together thoroughly. Load the baked poblanos with rice, the beef mixture, and top with shredded cheese. Bake for an additional 10 minutes. Serve and enjoy!View original recipe
