Instructions
1. Chop up 4-5 strips of bacon into pieces and cook in a cast iron or large skillet until almost cooked. 2. Peel and dice up the 3 sweet potatoes. Pour out most of the bacon grease, leaving about 2 tablespoons, and add the diced potatoes to the skillet. 3. Chop up a jalapeño and add it to the skillet along with 2 tablespoons of minced garlic. 4. Cook the potatoes on medium heat until they start to get tender. Then, turn up the heat to crisp them to your liking. 5. Once the potato mixture is cooked, add in some chopped kale and shredded cheese. 6. Optional - cook up a few eggs your favorite way. 7.
