Tuscan Ravioli is another go-to weeknight dinner for us. It looks fancy, but it is so easy to make. The only problem you will have is wishing you made more (just ask my wife!)
First, prepare the Tuscan Blend by combining 1/2 tablespoon Paprika, 1 teaspoon Parsley, 1 teaspoon Basil, 1 teaspoon Oregano, 1/2 teaspoon Salt, 1/2 teaspoon Pepper, 1/2 teaspoon Thyme, 1/2 teaspoon dried Garlic, and 1/4 teaspoon Rosemary.
On medium heat, melt 2 tablespoons of butter in a pan. Add the 4 minced garlic cloves and julienned sun-dried tomatoes and cook for 1-2 minutes. Pour in 1/2 cup of veggie stock, chicken stock, or white wine, and 1 tablespoon of the prepared Tuscan Blend spices. Reduce for 3 minutes. Add 1.5 cups of heavy cream and the remaining Tuscan Blend spices, and bring to a low simmer for 5 minutes. Lower the heat and add 1 cup of grated Parmesan, stirring for 2-3 minutes until melted and incorporated. Finally, toss in your ravioli (presumably cooked al dente) and plate. Enjoy!
